Fruit Extravaganza

  • 1 Banana
  • 1 Apple
  • 3 Strawberries
  • 1 Peach
  • 1 Kiwi
  • 1/8 Cup Nuts (soaked for 24 hours)

Slice all fruit into bite size pieces. Chop nuts in a food processor. Mix and serve! Be open-minded with this recipe. During the summer fruit options are almost limitless. Pineapples and mangos really add a great taste to the mix! In the winter you might have to use some frozen fruit, such as blueberries.

  • 1 Banana
  • 1 Sweet Apple
  • 3 Strawberries
  • 1 Kiwi
  • Fresh Blueberries

Dice the banana and strawberries. Peel and slice the apple and kiwi. Arrange fruit on plate. Be creative! During the summer months, try adding pineapple, mangos, peaches, and maybe even some star fruit

Dressing...

  • 3 Tbsp. Carob Powder
  • 1 Tsp. Vanilla Extract
  • Water

Combine carob and vanilla. Slowly add water until a “glaze-like” consistency is reached. Either drizzle this over the fruit platter, or put in a bowl for dipping. Top with coconut for a special treat!

Orange Julius

  • 3 Frozen Bananas
  • 2 Oranges
  • 1/8 Cup Raw Almonds

Juice oranges using an old fashioned citrus juicer. Combine juice, bananas, and almonds in blender. Whip until smooth. This is really a wonderful treat!

Power Oats

  • 1 Cup Rolled Oats
  • 1 Cup Water
  • 1 Mashed Banana
  • Fresh Fruit
  • Chopped Nuts

Stir water into oats. (For a thicker consistency, add more water; for thinner oats, add more.) Allow oats to soak for several hours, or over night. When oats are tender, add mashed banana, fruit, & nuts Enjoy! This recipe is wonderful with diced peaches, pecans, and a dash of cinnamon. Or, for apple cinnamon oats add shredded apple, walnuts, and cinnamon. It is very important to include the mashed banana though; without it you’ll end up with a very bland meal!

Think Green Banana Pudding

See our recipe book, A JumpStart to Healthy Living, for a way to make this into a beautiful, delicious frozen fruit pie!

Almond Milk

  • 1 cup almonds
  • 3 to 4 pitted dates
  • 6 cups purified water

Soak almonds for at least 12 hours. Process all ingredients in blender or Bosc. Pour through a very fine strainer, in order to remove pulp (if you are giving this to an infant, strain through a cheese cloth after straining through fine mesh strainer). Serve immediately, or store in covered container in frigerator. You can also add bananas/ strawberries to this for additional flavor. For a richer, thicker milk, add a small amount of frozen fruit.
